Summer Rolls

Let’s Roll this Summer with Vietnamese Summer Rolls.

They are vegan, healthy and most importantly, gluten free.

Recipe:

Serves 4

For the rolls:

5 rice paper sheets
1 carrot, julienned
1 scallion, julienned
1 yellow bellpepper, thinly sliced
50g rice noodles, boiled
handful mint, chopped
handful coriander, chopped
10g peanuts, salted and toasted
1 lemon
Salt and chili flakes/powder

For the sauce:

1/4 cup peanut butter
1 tbsp hoisin sauce
2tsp soy sauce
2 tbsp sriracha
1-2 tbsp water
1 tsp toasted sesame oil
1tbsp sweet chili sauce
method:

For the rolls:

  • Soak the rice paper in cold water, individually till softened.
  • Layer two rice papers, one on top of the other to ensure a sturdier roll.
  • Toss the rest of the ingredients together with a dash of lemon, salt and chili.
  • Place the mixture in the middle of the roll, and wrap as one would a burrito.

For the sauce:

  • Mix all ingredients together till a smooth dip is formed.

Serve chilled!

 

Notes:

  • Can add Fresh Mango or Charred Avocado in the roll for a more tropical flair.
  • Other dipping sauces that work well: Sweet Chili Sauce, Plum Sauce
