The Health Bowl

With change of weather setting in, beat the allergens with our super simple and delicious Health Bowl.

Inspired by the Thai Rice Soup Dish, Khao Tam, the Health Bowl consists of a flavourful broth with Rice, Veggies and Fresh Herbs.

 

The Recipe 

Serves 4

 

Ingredients:

 

For the Broth:

  • 1 Carrot, Finely Cubed
  • 1 Cup Beans, Finely Chopped
  • 1/4 head of Cabbage, Finely Chopped
  • 1/2 cup  Green Peas
  • 1/2 cup Pumpkin, Finely Chopped
  • 1/2 cup Fresh Herbs (Basil, Lemongrass, Mint, Coriander)
  • 2 Bay Leaf
  • 1/2 Stick Cinnamon
  • 2-3 Star Anise
  • 1tsp Pepper Corns
  • 1tsp Garlic
  • 1tsp Ginger
  • Salt
  • Please reserve the peels of all the vegetables to make the stock.

For the Rice:

  • 1 cup Rice (unboiled)
  • Salt and Pepper

For the Condiments/ Garnish:

  • Soy Sauce
  • Green Chili Vinegar
  • Fresh Herbs (Coriander, Basil, Mint)
  • Optional: Bean sprout, Lemon wedges, Fresh thinly Sliced Chili, Sesame Seeds

 

Method:

For the Broth:

  • In a mortar and pestle, lightly crush the Herbs, Pepper corns, Garlic, Ginger, Star Anise and Cinnamon to release the Aroma.
  • In a pot, add 3 cups of Water, all the vegetable peels and the crushed herb and spice mix.
  • Boil for 30 mins to an hour.
  • Let the stock sit for 15-20 mins.
  • Strain the Stock. Ensure to keep the liquid and remove the peels.
  • In the stock, boil the vegetables, till cooked through. Ensure all vegetables are evenly cut.
  • Once the vegetables are cooked, season the stock with salt. Remove from heat.

For the Rice:

  • Please boil 1 cup of rice. Once cooked, give a light toss with salt and pepper.

Assembly:

  • In a bowl, place the rice in the centre, top with the broth. Ensure to add the vegetable pieces.
  • Top with a handful of fresh herbs, sprouts, 1 lemon wedge and some thinly sliced chili.
  • Serve with Soy sauce and Chili Vinegar on the side.

Note:

  • For making the broth more flavourful (Umami rich), can add some mushroom stems/shitake mushroom and/or Kombu.
  • Can replace the veg broth with Chicken/ Lamb Stock and add some poached chicken/Shredded Lamb to the dish as well.
  • Can add a pinch of Turmeric to the Broth as well.
  • Can serve Fish sauce as a condiment as well.
